........... When cooking, I have a few rules, well more like guidelines. I like to cook fresh, organic, and homemade as much as possible. It gives my growing family the nutrition they need and gives me a piece of mind. I know, I know, you are thinking sometimes it is more cost effective to just grab a box of .99 Mac and Cheese than to whip up homemade mac and cheese, but I will show you how to match coupons with promotions so homemade cooking will be budget friendly.

I can see it now. The kids wouldn't take naps, the goldfish from the fair isn't looking so hot, you hear that noise again with the car, and your husband just called to say...your in-laws are coming over for dinner tonight!.
Breathe...Breathe, take a sip of red wine, I mean water, and breathe again. Here is a quick and easy recipe that is sure to impress.
NOTE: You will need a meat mallet for this recipe or a heavy skillet.
Ingredients:
1 cup grated Swiss, Mozzarella, or Monterey Jack cheese (any combination to make 1 cup)
8 Tbsp chopped ham
8 Tbsp Dijon mustard
Freshly ground pepper, to taste
4 boneless, skinless chicken breasts ( sprinkle with a pinch of sea salt)
2 eggs, beaten (can use just egg whites)
1 cup breadcrumbs
Directions:
1. Preheat oven to 400 degrees, lightly spray cookie sheet with cooking spray
2. Prepare filling by mixing cheese, ham, mustard, and pepper in a small bowl.
3. Place chicken breasts on large cutting board covered with plastic wrap (no large cutting board, no problem. Just line the counter top with plastic wrap and place chicken on top, then cover with more plastic wrap). Using the smooth side of a meat mallet, pound chicken with until very thin.
4. Divide the filling into four equal portions and spoon over flattened chicken breasts. Starting at one end roll chicken breast up like a...log (for lack of better wording) and secure with a toothpick. 5. Drench 1 piece of rolled chicken, in beaten egg, gently shaking off excess, and repeat process with breadcrumbs. Do this with each piece of rolled chicken.
6. Place breaded chicken on baking sheet and bake for 20 minutes, or until chicken is no longer pink inside.
7. Allow only to cool for a few minutes before serving.
